Holiday Potatoes



You know those foods that your mom/grandma always make at every holiday and you can't imagine a holiday meal without them? Yeah, this would be one of them for me. My grandma always makes these Holiday Potatoes and I can't imagine life without them. This is such a wonderful recipe because it can be made the day before and then refrigerated until you need to bake it. Fantastic side dish and the smell of them baking really takes me back....

Grandma's Holiday Potatoes
12 med-large potatoes (cooked and mashed)
8 oz cream cheese
1/2 c. sour cream
2 eggs beaten
1/4 c. butter or margarine
1/2 c. milk
1/4 c. chopped onion
1 tsp salt and dash of pepper

Mash and beat until fluffy and juicy. Put in a 9x13 pan. Can be covered and kept several days before baking. Bake at .... 350(?) for 45 min. Well, that was easy, huh? Good ol' home cooking that was uncomplicated. :) You'd better believe I made these on Sunday. Just wouldn't be a proper Holiday Dinner without them! This sounds delish! WE love mashed potatoes but this would put them over the top! :D
