Cavatini


My husband loves a dish that his mom used to make for him called Cavatini. I've looked for recipes for it online, but have come up with my own that we both love. It's not exactly the best dish for your health, which is part of why I only make it for special occasions (like his birthday). You can also add a salad to make the meal a little bit healthier! We both think it's much better than regular spaghetti, yet still frugal!

Baked Cavatini

1 Box of Penne (I'm using whole wheat this time)
1 Jar of Spaghetti Sauce
1 6oz package of pepperoni-quartered
1-2 cups of shredded mozzarella cheese
Optional: You can add spices, browned hamburger or turkey meat, peppers, onions, or cooked veggies. I threw in leftover taco meat we had from last night.

Make pasta according to package directions. In a large greased casserole dish or 9X13" pan mix sauce, quartered pepperoni and 1/2 to 2/3 of the cheese (and any optional items). Add drained, cooked pasta to the sauce mixture and mix well. Top with the rest of the cheese. (We LOVE cheese, so we tend to go a little overboard here) You can even shave some fresh parmesean cheese over it if you like. Refridgerate until ready to bake. Remove from refridgerator and bake at 35oF 30-45 minutes or until hot and bubbly. You may want to keep a lid or foil over it until the last 10 minutes or so to keep the cheese from overbrowning.
