Recipe of the Week: Fruit Pizza


As promised, the fruit pizza recipe I made up last week. I made this on a night of pregnancy cravings: pizza and fruit. Hope you like it!

Pregnancy Cravings Fruit Pizza

Ingredients:

  • Enough dough for 1 pizza (I make a recipe that makes 2 servings, so I just used half of that. 1 cheese pizza, followed by a dessert pizza! Don't pre bake it though)

  • 1/2 block cream cheese or neufetchel cheese

  • couple tsps of sugar

  • couple tbsps of preserves or jam, flavor of your choice (I used Strawberry Rhubarb)

  • Thinly sliced fruit of your choice (I used 1 plum, couple of strawberries and some defrosted blueberries)

  • White chocolate chips

Directions: Roll out the dough as thin as you can get it (we liek thin crust around here). Microwave the cream cheese about 30 seconds, until softened and mix in the sugar and preserves. Spread the cream cheese mixture evenly on the crust. Top with fruit of your choice in a nice pattern and sprinkle with the white chocolate chips (don't go too heavy on these, they add great flavor, but are very rich and can be overwhelming). Bake about 12-13 minutes or until the while chocolate starts to brown and the crust just lightly browned. Tastes great warm or cold! Enjoy!
